Ingredients

600g ripe tomatoes, diced

100g red onion, finely diced

Six medium Black Garlic Cloves, finely chopped

One heaped tsp dried oregano

One heaped tbsp raw sugar

One half tsp chilli flakes

One half flat tsp cumin powder

Four tbsp Aged Black Garlic & Jarrah Honey Balsamic Vinegar

Two tbsp olive oil

Salt and pepper
Directions
Place all ingredients in a large saucepan and stir together well.
Bring to the boil, then simmer gently for 40 minutes or until the ingredients have softened.
There should be minimal liquid left at the bottom of the saucepan.
Season with salt if needed.
