Ingredients

One tbsp olive oil

50g cherry tomatoes

Two tbsp butter

100g mushrooms, sliced

Salt and pepper

Three Black Garlic Cloves, mash to paste

One sourdough roll, sliced lengthways

One medium avocado, diced

One tbsp fresh parsley or coriander, roughly chopped

10g red onion, finely chopped

One half tsp white sesame seeds

One lemon wedge
Directions
Heat olive oil in a medium nonstick frying pan and fry cherry tomatoes until they start to blister.
Set tomatoes aside on a plate then put the mushrooms and 1 tbsp of butter into the pan. Sprinkle with salt and pepper. Sauté until mushrooms become golden and glossy. Add the rest of the butter and the black garlic and coat the mushrooms in the combined ingredients for a minute.
In the meantime, toast the sourdough.
Top the sourdough with avocado and roughly mash it with a fork.
Layer the mushrooms on top.
Sprinkle with parsley, red onion and sesame seeds.
Serve with a wedge of lemon.
