500g potato, peeled, cut into 1-inch cubes

200g bacon, diced

80g whole egg mayonnaise

10ml fresh lemon juice

Salt and pepper

70g baby dill pickles, diced

40g red onion, finely chopped

Four large Black Garlic Cloves, finely chopped

15g fresh chives, finely chopped
Directions
Boil potatoes in water for about 15 minutes until just tender. Drain, rinse and cool.
Fry bacon until well cooked, then set aside to cool.
In a large bowl, mix mayonnaise with lemon juice, salt and pepper. Stir in dill pickles, red onion, Black Garlic and most of the chives.
Add the cooled potatoes and bacon into the mayonnaise mixture and gently toss until all ingredients are evenly spread through.
Sprinkle with the rest of the chives and some cracked pepper.
