Blueberry Eton Mess is a sophisticated twist on a classic dessert, blending textures and flavors into a stunning treat. Crisp meringue chunks provide a light, airy base, while clouds of vanilla-infused whipped cream offer a silky contrast. Juicy blueberries simmered in a balsamic syrup add a tangy depth of flavor, perfectly balanced by the crunch of toasted hazelnuts. Finished with a touch of fresh mint, this layered dessert is as beautiful as it is delicious, making it an ideal end to any meal.

Ingredients
-
Two flat tsp brown sugar
-
Four tsp ABG & Cherry Balsamic Vinegar
-
250g fresh blueberries
-
120ml water
-
300ml whipping cream
-
One tsp vanilla essence
-
100g meringue, broken into chunks
-
50g raw hazelnuts, roughly chopped
-
Four mint leaves
Directions
Heat the brown sugar, balsamic vinegar, blueberries and water in a small saucepan and stir. Simmer for about 5 minutes until the blueberries soften and a syrup forms.
Please take off the heat and leave it on the bench to cool.
In the meantime, pour the cream into a bowl with vanilla essence and whip until soft peaks form.
Once the berries in the syrup have cooled, construct the dessert by layering meringue pieces, dollops of cream, berries in syrup and sprinkles of nuts in 4 glasses.
Top with mint leaves.
