This Garlic and Olive Oil Pasta is simplicity elevated — a dish that celebrates balance and boldness in every forkful. Ingredients

400g uncooked thin spaghetti

100ml Black Garlic & Co 'Aged Black Garlic Extra Virgin Olive Oil’

Four large cloves garlic, finely chopped

120g cherry tomatoes, halved

60g olives, pitted and roughly chopped

Three heaped tbsp sun-dried tomato strips
-
60g spring onions, finely sliced
-
30g flat leaf parsley, roughly chopped

Salt and pepper

100g Greek feta cheese, crumbled

Two tsp lemon zest
Directions
Boil the spaghetti until it is tender and cooked to your liking. Drain the spaghetti and run hot water through it so it doesn’t clump together. Set aside briefly.
On a low to medium heat gently warm the Aged Black Garlic Extra Virgin Olive Oil in a large and deep non-stick frying pan. Once heated add the garlic and lightly fry it for about 1-2 minutes until it isn’t raw. Add the cherry tomatoes, olives, sun-dried tomatoes, spring onions and parsley then gently fry for 2 minutes until the ingredients are warm.
Tip the cooked pasta into the pan and gently combine the ingredients, cooking for 2-3 minutes.
Season with salt and pepper.
Dish up the pasta meal into 4 servings, then sprinkle it with lemon zest and crumbled feta.
Drizzle with extra olive oil if desired.
