The golden puff pastry crust cradles a filling of sautéed red onion, smoky bacon, and earthy mushrooms, all complemented by the fresh bite of rocket or spinach. One tsp olive oil

100g red onion, finely chopped

200g bacon, diced

150g mushrooms, diced

Two handfuls of rocket or baby spinach

One sheet of 25 x 25cm puff pastry, thawed

One heaped tbsp fresh dill, finely chopped

Four large whole cloves of Black Garlic, finely chopped,

Three large eggs

One tbsp self-raising flour
-
One-third cup full-fat milk

Salt and pepper

60g tasty cheese finely grated
Directions
Preheat the oven to 200 degrees Celsius, using top and bottom elements.
Sauté onion, bacon, mushrooms and rocket in olive oil until cooked.
Line a quiche tin with the pastry and leave the corners hanging over the edge for now. Use a fork and gently poke the pastry, touching the bottom of the tin in about 20 places to make tiny holes for the steam to escape.
Pour the cooked bacon mixture onto the pastry. Sprinkle with dill and garlic.
Lightly whisk the eggs in a bowl and then mix in flour, milk, salt and pepper. Try to get as many lumps out as possible; some may remain. Pour egg mixture into a quiche dish and spread evenly. Sprinkle with tasty cheese. Bring the hanging pastry edges over onto the quiche.
Place in the oven on the middle shelf and bake for around 18-20 minutes or until golden brown on top. Remove from the oven and allow the quiche to stand for 10 minutes to settle.
Serve as is or with a salad.
