Ingredients

190g all-purpose flour (extra for dusting bench)

One flat tsp salt

One flat tsp sugar

Two flat tsp baking powder

Two tsp olive oil

One half cup water, room temperature

50g tomato paste
-
120g mozzarella cheese, grated

Four large Black Garlic & Co Black Garlic Cloves, chopped

Fresh herbs, olives, salami, red capsicum, mushroom and red onion.
Directions
Preheat the oven to 250 degrees Celsius using the top and bottom element function.
Lightly grease a 30cm round baking tray.
Mix sifted flour, salt, sugar and baking powder in a large bowl then add water and olive oil. Mix with hands until a dough forms.
Sprinkle the bench with a light scatter of flour. Add a little bit of water or flour if needed so the dough can be shaped into a ball, it shouldn’t be sticky.
Knead the dough for about 4 minutes until soft and springy, then roll in a ball. Cover in plastic wrap and let it rest on the bench for 20 minutes.
Sprinkle more flour lightly on the bench then use a rolling pin to roll the dough out to fit the tray.
Put the dough in the tray and spread with tomato paste.
Sprinkle with cheese then add all the ingredients.
Place in the oven on the middle shelf for 10 minutes or until the base is cooked through.
Slice and serve.
