400g bacon, diced

Five tbsp olive oil

300g sourdough bread, diced

120g whole egg mayonnaise

20g Dijon mustard

Six large cloves Black Garlic, mashed

Two heaped tsp fresh parsley, finely chopped

Four tbsp fresh lemon juice

One tsp Worcestershire sauce

Four tsp water

Salt and pepper

400g cos lettuce, chopped in large pieces

40g red onion, finely sliced

40g parmesan cheese, shaved
Directions
Fry bacon in 1 tbsp of olive oil until well cooked then set aside.
Make croutons by frying sourdough in 3-4 tbsp of olive oil until crunchy. Season croutons with salt, then set aside.
Make the dressing by mixing together mayonnaise, Dijon mustard, Black Garlic, parsley, lemon juice, Worcestershire sauce, salt and pepper in a small bowl.
Put the lettuce, red onion and bacon in a large bowl and pour in the dressing.
Toss gently until all the leaves are coated.
Top with parmesan cheese, croutons and a sprinkle of pepper.
