140g self-raising flour, sifted

120g fine desiccated coconut

140g castor sugar, sifted

25g Dutch-processed cocoa powder

200ml full cream milk

Three medium cloves Black Garlic, mashed

Icing Ingredients

60g salted butter, room temperature

10g Dutch-processed cocoa powder

120g icing sugar
-
Three-four tbsp hot water
-
Eight tbsp chocolate sprinkles

100g speckled easter eggs

Directions
Preheat oven to 170 degrees Celsius using the top and bottom element function.
Place 8 large patty pans on a muffin tray.
Mix flour, coconut, sugar and cocoa in a large bowl until well combined and no clumps. Pour in milk and stir until fully combined. Add the garlic and stir in thoroughly.
Spoon batter into patty pans until 2⁄3 full.
Put into the oven on the middle shelf for 15 minutes or until cooked through. Turn the tray around once whilst cooking to bake evenly.
Take the cupcakes out of the oven and place them onto a cooling rack.
In the meantime, mix all the icing ingredients except for the water. Add the water in one spoonful at a time. Use only what is needed to make the icing thick but soft enough to pipe.
Once the cupcakes have cooled, pipe them with icing.
Sprinkle with chocolate sprinkles to make a nest then position easter eggs on top.
