Ingredients

Four serves of rice

Fifteen Black Garlic cloves

Three tbsp light soy sauce

One rounded tbsp honey

Two tbsp oyster sauce

Two flat tsp ginger powder

One tbsp distilled vinegar

Two tbsp sesame oil

150g brown onion, finely sliced

600g chicken thighs, skinless strips

300g broccolini, sliced
-
150g red capsicum, sliced

Salt and pepper

One half cup fresh coriander, roughly chopped
Directions
Cook rice in a rice cooker.
In the meantime, make the stir-fry sauce by blitzing black garlic, soy sauce, honey, oyster sauce, ginger and vinegar in a single-serve blender (e.g. NutriBullet).
Fry onions in sesame oil in a large frying pan on a medium heat. Once browned, add the chicken and sauté on high until the chicken is half cooked on the inside and golden brown on the outside.
Add the broccolini and capsicum, then continue to fry on high for a couple of minutes until everything has cooked through. Reduce the heat to medium and pour the sauce and 1⁄2 cup of water into the pan.
Simmer the sauce for a few minutes until it thickens to your liking—season with salt and pepper.
Serve stir-fry with rice and a sprinkle of fresh coriander.
