Ingredients

Two extra-large free range egg yolks, room temperature

Pinch of sea salt, to taste

Three tsp fresh lemon juice

One clove fresh garlic, minced

One fourth cup extra virgin olive oil, mild strength

Five small cloves Aged Black Garlic, mashed

Freshly ground pepper, to taste
Directions
Put the egg yolks, salt, lemon and fresh garlic into a blender cup. Using a hand-held mixer, blend ingredients gently on low for about 15 seconds until just combined.
With the blender running on low, very slowly drizzle in the oil (over a couple of minutes) and mix ingredients until it becomes thick and emulsified. Only use as much oil as needed to get a mayonnaise consistency.
Stir the black garlic and pepper through the aioli thoroughly.
Add extra lemon juice or water if needed to balance the acidity or thin out the consistency.
