3 large sweet potatoes, skin on

4 Tbsp Aged Black Garlic Savoury Paste

40g salted butter

Zest of a lemon

Salt and pepper to taste

8-12 lamb cutlets

4 Tbsp Aged Black Garlic Savoury Paste

4 Tbsp olive oil
The cutlets
Directions
Preheat your oven to 200°C fan forced.
Lay the sweet potato on a tray and place it in the oven for 30 mins or until fork tender.
Remove from the oven and cool until you are able to handle them.
Remove the skin and place the sweet potato in a bowl with the remaining ingredients.
Mash with a masher or fork, then season to taste.
For The Cutlets
Mix together the paste and oil, then brush each cutlet on both sides and season.
Grill cutlets to your liking (5-8 mins) in a hot pan.
Serve with warmed mash and salad greens.
