40g fresh coriander, very finely chopped

Two tbsp olive oil

150g red onion, finely sliced

Four cloves fresh garlic, finely chopped

250g zucchini, sliced
-
200g mushrooms, sliced

150g red capsicum, sliced

Two tsp dried oregano

Two rounded tsp Aged Black Garlic Savoury Paste

One flat tsp of cumin powder
-
One heaped tsp smoked paprika powder

One heaped tsp onion powder
-
One flat tsp coriander powder

400g sizzle steak, strips
-
Eight tbsp natural yoghurt
-
One handful of coriander leaves
-
Hot sauce (optional)

Eight medium soft tortillas (18cm)

Directions
Mix all the herb dressing ingredients, then set aside in the fridge.
Make guacamole by mashing avocados with salt, pepper and lime juice, then set aside in the fridge.
Heat 1 tablespoon of olive oil in a large non-stick frying pan and sauté red onion and fresh garlic until partly cooked. Add zucchini, mushrooms and red capsicum. Sprinkle with oregano and plenty of salt and pepper. As vegetables partly cooked, stir in Black Garlic Savoury Paste.
Mix dry spices in half a cup of hot water, then stir into the pan. Continue to simmer until the sauce thickens.
In the meantime, heat one tablespoon of olive oil in another pan and once very hot, quickly fry the beef strips. Stir the meat into the fajita pan. Serve fajita mix in soft tortillas with herb dressing, guacamole, natural yoghurt, fresh coriander and hot sauce.
